How we make Patisserie

Patisserie is the collective name for pastries, cakes, tarts, and other fine sweets.
At Vlaamsch Broodhuys all patisserie are made in-house, and these little treats are freshly prepared in our stores every day to make special moments extra festive.

Delicate sweets

Like the bread, the patisserie contains only honest ingredients, and these little works of art are made according to simple French and Flemish recipes. Timeless and elegant, without too much fuss. For example, in a nut cake you can really taste the full, earthy flavor of the nuts, and recognize the experience of the pastry chef in the rich structure of the pastry cream.

The tastiest flavors

For the pastries, we at Vlaamsch Broodhuys only use Dutch cream butter of the best quality, and never substitute ingredients such as margarine or oil. We also only use fair trade muscovado sugar; a 100% natural, unrefined sugar that contains many minerals and trace elements thanks to the minimal processing of the sugar cane. Butter, milk and eggs are the basis for almost all pastries, but often only serve as a carrier for the real flavors. That is why we select only the finest for our patisserie, such as California almonds and pistachios, French Périgard walnuts, Greek currants, Belgian Callebaut chocolate and Dutch strawberries. So if you have nothing to celebrate, no problem; our patisserie is quite a good reason for a party in itself.

Sweet classics

Our certified pastry chefs work differently than our bakers. They work with softer doughs and ingredients that differ per season. Each cake or pastry requires even more individual craftsmanship than bread. Together we regularly discover a 'new' classic to put on the menu and experiment until perfection is reached. French classics such as the tompouce and tarte tatin will always be available, as well as a nice selection of Flemish cookies. Because let's face it, these iconic treats never get boring.
